I have been trying to cook more at home lately, and thought I would start sharing some of the recipes that get two thumbs up. Anything that gets featured here will be 1) EASY, 2) QUICK, 3) a hit with the kids, and 4) as healthy as possible. Salmon with Maple Lemon Glaze {from Cooking Light}
- 2 TBSP fresh lemon juice
- 2 TBSP maple syrup
- 1 TBSP cider vinegar
- 1 TBSP canola oil
- 4 (6oz) skinless salmon fillets
- 1/2 tsp salt
- 1/4 tsp pepper
1) Preheat broiler
2) Combine first 4 ingredients in a ziploc bag. Add fish to bag and seal. Refrigerate 10 minutes, turning bag once.
3) Remove fish from bag, reserving marinade. Place marinade in bowl and microwave for 1 minute at high.
4) Heat large ovenproof skillet over medium heat. Sprinkle fish with salt and pepper. Coat pan with cooking spray.
Add fish to pan, cook 3 minutes. Turn fish over. Brush marinade over fish. Broil 3 minutes or until fish flakes easily when tested
with a fork.
I serve it with roasted potatoes and peas. The marinade is also great with pork tenderloin or boneless chicken thighs.
